Pumpkin Crunch Cake...Instead of Pumpkin Pie!




Oh my Word!  Talk about luscious!  On Thanksgiving and Christmas I always make Pumpkin pies.  The kids, I've started noticing, rarely go back for seconds.  I know they have other places to go (other grandparents, etc.).  Buttt...even Larry and I are getting tired of the same old thing...
I found this recipe several months ago and totally forgot about it!  Going through my old recipe keeper, this one fell out onto my lap, begging me to make it! lol
So I did, yesterday evening.  It needed to set up overnight in the refrigerator so after it had cooled for several hours, I popped it in and let it get cold.  This morning...After breakfast...lol...I cut into it for the above final photo.  Larry was gracious...lol...and said he'd help me out by eating it!  I had a forkful and must say, it's Wonderful!!
So, Thanksgiving and Christmas menus, look out!  There's a new Pumpkin in town!



Enlarge, hit save image then go to your photos and print the recipe by right clicking on the photo!  Or, just jot down the ingredients ( there's only a few).  I really need to find one of those recipe printing links!! 
 Then just follow the instructions.
Preheat your oven at 350* F (176.66 C)


9 x 13 sized dish...Spray with Pam oil...or rub with butter, liberally.






Mix all ingredients except pecans and butter.



Pour into dish, cover with cake mix (I used white but yellow works too!)
I thought about a chocolate cake mix but don't know if it would overpower the pumpkin flavor!



Sprinkle on all the pecans...If you don't like all the pecans, just add a little less.  




Pour on the melted butter.



I buy my chopped pecans from a company called, Priesters.  Cheaper that way...5 lb box.  Go check them out!



After it was baked...Let cool, refrigerate at least two hours or (best), overnight.  It's a great "make ahead" dessert!




I really hope you try this recipe!  It's now one of our holiday favorites!

Thanks for this recipe. Do you know every August I make some thing pumpkin spice? I always feel it is a nice reward for haven’t gotten through a hot summer, even though much more heat is ahead in the dog days of August. I just start craving pumpkin this time of the year. I am definitely going to give this a try. It sounds delicious. By the way, this week I’ll be making your oatmeal. Thanks for that as well
