 Lime Cracker Pie Recipe

Instead of using whole crackers, as the recipe calls for, I crushed them (right in the sleeves) and used that because I wanted to try the recipe out first...cutting the ingredients in half...and because it was nearly lunchtime!  And guess what!  It only took me 15 minutes from beginning to end to prepare!  And...I really wish I'd have made the full recipe instead...It Is Delicious!!!

Next time I make it...I'll make it correctly...using the complete recipe.



That's the fresh lime juice...and I was bumfuzzled how adding lime juice (acid) to pure condensed sugar (added sucrose) would instantly turn a gelatinous mess into a dreamy, fluffy like consistency!!   Pure yummyness and not too sweet!  It's science...go figure... :o)









You just layer the whole crackers or crumbs (if you're in a hurry like I was) in a pan or bowl...It should sit in your refrigerator for several hours...but, I couldn't wait. lol

That looks so good Donna, thanks for the recipe. I have to admit I felt a bit guilty laughing at the gravestone recipe. I did see one once visiting a well known cemetery, on one headstone it said "I told you I was sick." Oh dear!
