Shortbread Lemon Cookies
SO glad I made them though...
SHORTBREAD LEMON COOKIES
Ingredients:
1 cup of butter (2 sticks)
1/2 Cup granulated sugar
Beat these together until light and fluffy
Add to the above mixture:
1/2 teaspoon salt
2 Tablespoons vanilla
1/2 Cup finely chopped and toasted pecans (optional)
2 Cup regular flour
Mix all above ingredients together, but only until everything is mixed in... don't over beat it.
Refrigerate for thirty minutes.
PREHEAT OVEN TO 350 DEGREES, NOW!
Scoop out little round balls of dough...roll them in the palms of your hands...then, flatten to about 1/8 inch.
I lined my pan with parchment paper but if you don't have any, they should do just fine. Don't grease the pan.
BAKE FOR 10 TO 15 MINUTES
(Or, until they have a little, JUST BARELY, a light brown edge to them. Depends on how hot YOUR oven gets) I baked mine for about 16 minutes...you'll just need to check!
DO NOT OVER BAKE....and don't walk away and get interested in Young & the Restless either!!Hahaa...SET THOSE TIMERS
Glaze:
You can mix powdered sugar and lemon juice together (as much as you think you'll need. I made two little batches to cover 16 cookies) until its lightly stiff and finely pours from your spoon onto the cookies, to decorate.
Let cool slightly...or Not... then drizzle the glaze over the cookies any way you wish...I made circular motions on mine. Next time, I'll make the glaze thicker the cover the entire top of the cookies.
After glazing, I let the cookies cool Completely right on the baking pan...
