Best Ever Pancakes!

I have NEVER had pancakes as Fluffy and light as these before...In My Life!!LOL...And Where did I find the recipe??? On the back of a Bisquick Box!! I Swear It!! I Did tweek it just a tiny bit by adding 1/4 cup more milk to the batter to thin it out a bit but Other than that, Nothing! So if you have Bisquick OR a Comparable product, lets get to mixing and cooking!

Here's what you'll need:
Serves Four

2 cups Original Bisquick Mix OR Comparable pancake product
1 cup milk if you like them thick...IF NOT, add 1/4 cup more milk
1 Tbsp sugar
2 Tbsp of LEMON JUICE!!! Yes!
2 tsp baking powder
2 eggs
1 tsp vanilla


In a bowl, put the Bisquick, milk, sugar, lemon juice and baking powder and stir till mixed but don't over do it with the stirring!
Separate the egg yolks from the whites...
Add the yolks and stir them in
Add Vanilla
Now get your mixer and whip the egg whites till fluffy, in a separate bowl.
Add whites to the pancake mixture and gently mix in.

Heat your pan or griddle to about 375 or 380 degrees. Start pouring and flipping!

That's It! Makes about 14 pancakes. I always top mine with butter and powdered sugar with some real lemon juice squirted all over....Hubby likes plain old syrup.

Nice blog but many food is from non organic premaid things... like canned tomato etc. not healthy.

I have made these pancakes before but never with lemon juice! I love lemon so I will definitely give this a try!

Grate in some fresh nutmeg (or powered if you don't have a whole nutmegs) and it's like eggnog cakes!
