Creamy Potato Soup

I love potato soup, especially on a chilly night! I knew I needed to make Something light yet filling for supper so Hubby said he thought it would be a good night for soup...so this is what I came up with! If you are so inclined, here's the recipe:
Enough soup for Two!

You'll need:
1 large pot with cover
2 nice size Idaho potatoes
enough water to cover potatoes

Dice potatoes, throw in pot and then fill with water only covering the potatoes. Bring to boil then cut heat back to medium. Cook till tender.

Now you'll need:
1 pint half & half cream
1 large yellow sweet onion, diced
Saute the onion in several tablespoons oil
Stir in a tablespoon of butter
Continue stiring (Don't walk away!!!) until they are browned.

Now:
If the potatoes are tender, get your masher out and mash them right in the water! It'll end up being a thick mush!Hahaa...Well, it will!
Pour in the Onions and cream...stir.
Salt and pepper to taste.

You can add ANYTHING else you want...Ham, chicken, corn, bacon...Whatever you'd like!
That's it! Took about 30 minutes....Enjoy!

Wow! now I know what WE're having for supper. Back in my hippie days I made something almost the same but used a bunch of cheese--now I know better :O)

I've used this recipe for years! It's a Great base for all sorts of additives!
Cheese soup needs a flour base gravy...someday I'll post that recipe...

Yummmmm :9 and I'd add fried bacon and crunchy croutons mmmmm. It's hot here but I don't care I love potato soup.

I read over your cooking blog. Great idea, especially with the homestyle pictures. I think I may have to start another blog just for cooking. I could handle it since I do not cook much. Made Pumpkin Gingerbread loaves this morning. Yum.
