Chicken & Dumplings...Easy Style
Hello Again! Well, it's been awhile since I've posted a recipe but I do believe it's about time! There's just something about Winter and Chicken & Dumplings...they seem to go together. I developed this recipe years ago, in Fact...Hubby and I just about lived off this recipe for the first week we were married in '72. We'd spent a little too much on the honeymoon trip and when we got home, we discovered about all we had money for was chicken and biscuits!LOL....Well, I turned that old chicken into a Big pot of chicken & dumplings and we managed to make it to payday! So...if you want an Easy...quick and money saving recipe, lets get going! Here's what you'll need:
4 to 5 cans of the Cheapest canned biscuits (usually store brand)
4 to 5 chicken breast (still partially frozen for easy cutting)
Water
Salt & Pepper
1 small lemon (YES! I said a Lemon!)
I use store brand biscuits.
Slice up the chicken into bite size pieces.
Throw the pieces into a heavy duty pot with a lid and cover with water. Turn on high heat and bring to a boil.
Pop all the cans...place the biscuits either on the drain board or on a plate.
Slice the lemon in half and squeese both halves into the water with the chicken...Go Ahead!!LOL...
Now...When chicken breast boil, there is a "scum" that likes to form on the top of the water...
See that darker scum? That's what you want to skim off....
This is what it looks like After you skim the scum off...
And This is the scum that I just poured down the drain....

Ok, now what's the lemon for?
The lemon gives it all a unique taste...sort of like lemon chicken...that extra "spark"...a "zip"...hahaa...
isn't the "scum" disgusting? never let a kid see that -- :0
