Easy Banana Pudding
Well, how about something sweet for a change! Easy Banana Pudding. That's the ticket! I was wandering in the grocery, hunting for some noodles for another dish I cooked up (that's another post), when I saw a package of Pepperidge Farms Chessmen cookies. Well now...it's been a Long time since I'd treated Hubby with banana pudding and what could be Easier? So, Ready? Here's what you'll need:
2 packages of Chessmen cookies
(OR, Vanilla Wafers...your choice)
4 large eggs
3 Tablespoons Cornstarch
3 Cups of milk
1/2 Cup sugar (a little more if you like it Sweeter)
3 bananas, sliced
2 teaspoons Vanilla
1 Tablespoon butter
Put your Sugar, Cornstarch and milk in a sauce pan and turn the heat up to medium high.
Have your cookie packages Opened and Ready to go.
Crack 4 eggs in a bowl and mix them up well...
Couldn't be easier!
The mixture should have come to a boil by now....I use a whisk to stir. After it comes to a boil, take it Off the heat and let it cool for about 5 minutes. Now, pick up your whisk...and start pouring your eggs into the heated mixture...SLOWLY...WHILE STIRRING....FAST!! Hahaaa...You simply don't want your eggs to curdle! They might, if you have it Too hot and pour too slowly. I've had it happen to me once...don't worry though, if it Does curdle, you can fix it by pulling out your hand mixer...and about a quarter cup milk, and whip it back to a nice smooth consistency. You Young people are probably wondering...Why doesn't she simply use Instant Pudding???Hahahaaa......My answer? Taste. If you've never done it the old fashioned way, you don't know what you're missing!
