Zucchini Pie

I made this dish, this afternoon. I have never added zucchini to my quiches before today...I'll Never make another, Without it!! This is Good!
So are you Ready??? Lets Go!



I used:

2 large tomatoes
6 eggs to 8 eggs
2 medium zucchini-diced
2 thawed large pie shells
1/2 cup to 3/4 cup of cold water
3-4 cups of Monterrey and cheddar finely shredded cheese...OR More!!LOL...


Make sure you've thawed your pie shells to room temperature. NOW...Turn On Your Oven To 300 degrees.


Cut both ends off of the zucchini!


Get those veggies chopped up and put them in a bowl, together.


Remember!! Use 6-8 eggs!! This picture is deceiving!! And I couldn't reshoot it!LOL...


At This point, I Always add the water to the eggs...It makes the egg batter so fluffy! Even when I make scrambled eggs...I Never use milk...It's a Solid, so it makes your eggs heavy.


Pour the egg mixture into the bowl with the veggies...


Spoon into your Unbaked pie shells, evenly.


Spread the cheese Liberally, all over the top! Don't be afraid!


Pop them in the oven....Let them cook at 300 degrees for about 30-40 minutes then start checking them more closely! Don't let them burn!


This dish turned out wonderfully!! When I cut it, it was SO light and fluffy!


Now you didn't think I'd wait for Hubby did you? LOL...I had to get this recipe Posted! Happy eating!!

Oh, that looks very good, and easy to make. And I also think my stomack will love it.I will try this recipe. Bur not today, because I shall go to a birthday tonight.Me and a neighbour shall be kitchen helpers there.
Most is prepared beforehand, so we shall just be there to watch that all is ok. We shall make coffee, and fill up when it is empty.
We shall also wash the dishes and glasses and so on.
Place the food on the tables, and look after things. I am glad we are two, it is about 50 guests there.
