Pot Roast...Husband Style

Hubby Loves a good pot roast so lets get going! He's getting hungry...LOL... Get a heavy pot out With a lid to cover. Now, in this instance, I'm using a Chuck roast. It's a cheaper cut of meat but full of flavor.

Grab some oil...I use Canola...You don't have to worry about the oil getting too hot and burning in this recipe.

Pour in about 2-3 tablespoons to the heating pot. Turn the heat up to high. Go ahead! Don't worry, you've got to brown the meat on both sides in a minute!

Now get some flour and sprinkle it on both sides.

Massage it into the meat! Yes....Massage it! You want to get every nook and cranny covered with flour.

The grease should be nice and hot so, gently place the roast into the pot and brown on both sides.

Cover for about 5 to 10 minutes.

Now at This point, you can add Any special seasoning that you've created or bought. Hubby's favorite is a Southwest blend. The recipe will be at the bottom of this post.

Now cover again and let the heat start to create those juices!

While the meat is cooking, You need to get busy and chop up the vegetables! Make Sure to have a cup of water ready!!

By the way!! After chopping up all those veggies?? Put all those peelings into a throw a way bag for the trash or go throw them out onto the compost pile. Do Not put them down the garbage disposer...LOL...Unless you Just Want to have a plumber come for a visit!!!

Pour them right on top of the meat.

Now add that cup of water!

A little salt.....

A little pepper.....Put the lid back on, and TURN THE HEAT ON SIMMER....Now go clean something....or bathe the dog....Check on the roast every so often though. It'll be cooking for about 2 hours.
Well, there you have it! It takes a while to make but it is So good...and by the way? The gravy is Not hot...as in tongue burning seasoning, hot...Enjoy!!
Southwest Seasoning
(Use a jar with a lid to store this in)(TBSP=tablespoon)(tsp=teaspoon)
1-TBSP Salt
2-TBSP Paprika
2-TBSP Chili powder
2-TBSP Cumin
1-TBSP Coriander
1-tsp Cayenne pepper
1-tsp ground Black pepper
1-tsp crushed Red pepper
1-TBSP Granulated Garlic
1-TBSP Oregano

What I should say was that this seems very yummy! And it isn't difficult to make either.
But some of your ingredients I cannot eat, as paprika and red pepper. It will be too hard to my stomack. I have had trouble with it about ten years. But it is nothing to do with it yet. May be later. I just have to be careful what I eat, and when I am, I doesn't have pain at all.

This looks way too yummy. I just haven't been cooking much unless it's grilling. BTW, Ryan's way too young for Christina, she's almost 26 though she acts like she's 16 still. LOL
